TANDOORI FISH WITH SALAD

This is an excellent mild starter for a special occasion. You will require a liquidizer or blender for this recipe.

Ingredients 
  • 120 ml (4 fl oz) plain yogurt
  • 1 tsp salt
  • 1 tsp turmeric powder
  • 2 tsp tomato puree
  • 2 tsp tandoori masala
  • 25 g (1 oz) fresh garlic, peeled
  • 25 g (1 oz) fresh ginger, peeled
  • 5–6 drops red food coloring
  • 4 green chilies
  • 675 g (1½lb) cod fish, cut into 10 cm (4 inch) long pieces
  • 60 ml (2 fl oz) cooking oil

Ingredients For salad
  • 110 g (4 oz) cucumber slices
  • 1 onion, sliced
  • 2 fresh tomatoes, cut for salad
  • 110 g (4 oz) sliced radish, cut for salad
  • Some fresh lettuce, washed
  • 1 lemon, sliced

Method
1. Place the yogurt, salt, turmeric powder, tomato puree, tandoori masala, garlic, ginger, food coloring and green chilies into a liquidizer and blend into a liquid.
2. Place the fish pieces in a large pan. Pour the blended liquid over the fish and let the mixture marinate for about 2 hours.
3. Place a wire rack in a baking tray. (The wire stand in the grill tray is very useful for this.)
4. Remove all the fish pieces from the pan and place them on the wire rack.
5. Spread the oil evenly on the fish pieces.
6. Cook at mark 5 (375°F or 190°C) on the middle shelf of a preheated oven for about 35 minutes.
7. Arrange the salad and lemon around the sides of a large serving dish and place the fish in the center.
8. Serve while the fish is hot.
